Slow-Roasted Garlic Chicken Recipe

**Ingredients:**

  • - 1 whole chicken (about 4-5 pounds), giblets removed
  • - Salt and freshly ground black pepper, to taste
  • - 1 head of garlic, halved horizontally
  • - 2-3 sprigs of fresh rosemary or thyme
  • - 2 tablespoons olive oil
  • - 1 lemon, halved
  • - 1 onion, peeled and quartered
  • - 1 cup chicken broth

**For the Marinade:**

  • - 4 tablespoons olive oil
  • - 4 cloves garlic, minced
  • - 1 teaspoon paprika
  • - 1 teaspoon dried thyme
  • - 1 teaspoon dried rosemary
  • - Salt and black pepper, to taste

**Instructions:**

1. **Marinate the Chicken:**

   - In a small bowl, mix together the marinade ingredients: olive oil, minced garlic, paprika, dried thyme, dried rosemary, salt, and black pepper.

   - Rub the chicken inside and out with the marinade. Place it in a large bowl, cover, and refrigerate for at least 2 hours or preferably overnight.

2. **Preheat the Oven:**

   - Preheat your oven to 275°F (135°C).

3. **Prepare the Chicken:**

   - Remove the chicken from the refrigerator and let it come to room temperature for about 30 minutes.

   - Season the chicken generously with salt and black pepper, both inside and out.

   - Stuff the cavity of the chicken with halved garlic head, fresh rosemary or thyme, and lemon halves.

4. **Roast the Chicken:**

   - Tie the chicken legs together with kitchen twine and tuck the wing tips under the body of the chicken.

   - Place the chicken in a roasting pan. Drizzle it with 2 tablespoons of olive oil.

   - Surround the chicken with quartered onions.

   - Pour the chicken broth into the pan to keep the chicken moist during roasting.

5. **Slow Roasting:**

   - Roast the chicken in the preheated oven for 3 to 3.5 hours or until a meat thermometer inserted into the thickest part of the thigh registers 165°F (74°C). Baste the chicken with pan juices every hour.

6. **Rest and Serve:**

   - Once the chicken is cooked through and golden brown, remove it from the oven. Tent it loosely with foil and let it rest for 15-20 minutes. This allows the juices to redistribute throughout the meat.

   - Carve the chicken and serve it with the roasted garlic, onions, and pan juices.
