- Salt to taste
- 2 Maggi tastemaker spice packets (included with the noodles)
- Fresh coriander leaves, chopped for garnish
- Fresh mint leaves, chopped for garnish (optional)
- Fried onions (optional, for garnish)
Instructions:
Prepare the Maggi Noodles:
- Cook the Maggi noodles as per the package instructions, but without the tastemaker packets. Drain and set aside. Keep the tastemaker packets for later use.
Sautéing Spices:
- In a large pan or pot, heat oil or ghee over medium heat. Add cumin seeds, cardamom pods, cloves, cinnamon stick, and bay leaf. Sauté for a minute until fragrant.
Cooking Onions:
- Add sliced onions and sauté until they turn golden brown.
Adding Tomatoes:
- Add chopped tomatoes and cook until they become soft and mushy.
Adding Spices:
- Add ginger-garlic paste, turmeric powder, red chili powder, garam masala, and salt. Cook for a few minutes until the spices are well combined and fragrant.
Cooking Vegetables:
- Add the mixed vegetables to the pot and cook for about 5-7 minutes, stirring occasionally, until the vegetables are tender.
Adding Yogurt:
- Stir in the yogurt and cook for another 2-3 minutes.
Combining Noodles and Vegetables:
- Add the cooked Maggi noodles to the vegetable mixture. Sprinkle the Maggi tastemaker spice packets over the noodles and gently mix everything together.
Simmering:
- Reduce the heat to low. Cover the pot with a lid and let it simmer for about 5 minutes, allowing the flavors to meld together.
Resting:
- Once done, remove from heat and let it rest, covered, for 5 minutes.
Garnish and Serve:
- Garnish with fresh chopped coriander leaves, mint leaves (if using), and fried onions (if using). Serve hot.
