Cilantro-Lime Chicken

Recipe of Cilantro-Lime Chicken

INGREDIENTS
  • Divided 4 tablespoons of extra virgin olive oil
  • 2 limes juice
  • Finely cut cilantro, 1/4 cup
  • 2 minced garlic cloves
  • 1/2 teaspoon cumin
  • Crushed red pepper flakes in a pinch
  • 4 chicken thighs, skin on and bone in.
  • Halal salt
  • Black pepper freshly ground
  • Served cooked white rice
DIRECTIONS

Combine 2 tablespoons of oil, cilantro, lime juice, cumin, garlic, and red pepper flakes in a bowl. Chicken should be added and coated. Allow marinating for 30 minutes to 2 hours in the refrigerator.

Set the oven to 425° when you are ready to cook. The remaining 2 tablespoons of oil should be heated over medium-high heat in a large ovenproof skillet. Add chicken to skillet skin-side down and add remaining marinade after seasoning with salt and pepper. around 6 minutes, or until skin is brown and crispy. After two minutes, flip the food.

Bake skillet in the oven for 10 to 12 minutes, or until chicken is well done.

Serve with pan drippings poured over rice.
