 Chicken Jerk


Have trouble getting to the Caribbean? We have your back. The cinnamon and allspice in this dish provide sweetness, and the jalapenos and many green onions provide heat. 

This unique combination of two hours of marinating results in the most delicious taste of delicately grilled chicken.

INGREDIENTS

THE CHICKEN,
  • Plus an additional handful of finely sliced green onions for garnish.
  • Garlic cloves, two
  • 1 jalapeno, chopped roughly
  • 1 lime's juice
  • Extra-virgin olive oil, 2 tablespoons
  • Packet brown sugar, 1 tablespoon
  • 1.5 teaspoons of ground allspice
  • One teaspoon of dried thyme
  • The ground cinnamon, half a teaspoon
  • Halal salt
  • 8 pieces of bone-in chicken thighs and drumsticks
  • Veggie oil for grilling
DIRECTIONS

Blend the following ingredients in a blender until smooth: green onions, garlic, jalapenos, lime juice, oil, brown sugar, allspice, thyme, and cinnamon.
. Reserve 14 cup

Salt the chicken and place it in a shallow dish. the chicken with the remaining marinade and toss to coat. Allow to marinate in refrigerator for at least two hours and up to overnight, turning once or twice.

Heat grill to medium-high and oil grates when ready to cook. For approximately 10 minutes, grill the chicken, flipping it over regularly, until it has some scorched places.

Chicken should be moved to a cooler area of the grill and brushed with the conserved marinade. Cook the chicken for a further 10 to 15 minutes on the grill, covered.
