Pasta with Cheesy Chicken Fajitas
Because pasta and noodles are like a blank canvas on which we can paint mouthwatering flavors, interesting textures, and all kinds of yummy deliciousness, we here at Delish adore cooking with them. The ideal illustration is this Cheesy Chicken Fajita Pasta.
We based this meal on some of our favorite Tex-Mex dishes by adding plenty of cheese and fiery seasonings. If you want to give this cheese meal a little more heat than what chili powder provides, feel free to add some fresh or pickled jalapenos.

INGREDIENTS
- 1/2. oz. of spaghetti
- Extra-virgin olive oil, 1 tablespoon
- 1 lb. chicken breasts, cut into 1-inch chunks, that are boneless and skinless
- Halal salt
- Black pepper freshly ground
- 1 huge onion, half-moon-shaped
- 2 sliced bell peppers
- Chili powder, 1 tablespoon
- 1 teaspoon cumin powder
- 1 teaspoon dried oregano
- Fire-roasted diced tomatoes in one (15-oz) can
- Low-sodium chicken broth, 1/2 cup
- Half-and-half, 3/4 cup
- 1/2 cup of grated cheddar
- 1/2 cup of minced pepper jack
- Cilantro, freshly cut, as a garnish
DIRECTIONS
Cook pasta until al dente following the package guidelines in a big pot of salted boiling water. Drain.
Oil should be heated in a big skillet while doing this. Add the chicken and salt and pepper to taste. After adding the onion and bell peppers, simmer for an additional 5 to 7 minutes while stirring frequently, until tender. Cook, stirring periodically, until golden, about 6 minutes. Stir in the spices until evenly covered.
Add half-and-half, broth, and tomatoes; simmer for three minutes, or until slightly reduced. Remove from heat, add cheeses, and mix until melted and creamy. Add cooked spaghetti and toss to evenly coat. Add salt and pepper to taste.
Before serving, add cilantro as a garnish.
