Recipe for Poached Salmon
Chef Eric Ripert provided this easy-to-follow recipe for poached salmon that is full of flavor.
Ingredients
Freshly ground white pepper and fine sea salt
8 skinless, 3 ounces apiece, ideally organic or wild salmon fillets
Directions
Fill a small pot with water and bring to a boil over high heat; season with salt. Over medium heat, add just enough boiling water to a large skillet to cover the bottom of the pan. Add fish to the water after seasoning with salt and pepper. Depending on the desired level of doneness, cook the fish for 3 to 5 minutes at a barely simmer until it feels warm to the touch. Serve right away.
