4 skin-on, boneless, 6-ounce salmon fillets
Directions
A large cast-iron skillet should be warmed over high heat. Put the skin-side-up salmon fillets in the skillet. Cook for 4-5 minutes, or until thoroughly browned. Flip with caution, then turn the heat down to medium. About 5 minutes, or just until the middle is opaque. Place on a platter, then serve. 4 servings.
