Recipe for STRAWBERRIES AND COCONUT CREAM
Usually, chocolate chips and peanut butter or chocolate chunks and roasted peanuts are my go-to desserts. I adore savory, salty, and sweet flavors together.
Occasionally, like in this recipe for Strawberries and Coconut Cream, I'll come up with something that doesn't contain chocolate or peanut butter. It was a no-brainer for me to combine some fresh strawberries with some coconut because I like everything coconut, especially now that strawberries are in season. They don't need sweetness since they are so sweet.
EASY
Making coconut cream is quite simple. Simply place full-fat coconut milk in the refrigerator for the night. The solid portion may then be removed and whipped with a hand mixer or, as I do, placed in a Nutribullet. Vanilla extract is the only thing I add to it. Although you could also add sugar, I believe it tastes excellent without it.
I've also made coconut cream using the entire can of coconut milk, including coconut water. It just depends on the level of consistency you desire. I finish the entire can when I make coffee. I add some stevia and coconut cream to my coffee. It has a latte-like consistency.
The funny thing is, I didn't use whipped cream all that much before I became vegan. Maybe it was the Cool Whip all around me. I only recall loving it once, and it was at a coffee shop close to my college.
Every time I ordered coffee, I always added whipped cream and shaved chocolate to the top. It was definitely decadent!
I haven't missed eating meat or dairy since being vegan 18 years ago. I have been a vegan for so long, but I haven't yet tried any whipped cream substitutes. I simply didn't feel the necessity. Additionally, creating your own is certainly far less expensive and doesn't include any strange processed materials.
I strongly advise you to try coconut whipped cream if you haven't already. You'll probably enjoy it if you like coconut!
Ingredients
Full-fat coconut milk, 13.5 ounces
Vanilla extract, 1 teaspoon
1 cup of strawberries, chopped
Instructions
Place coconut milk in the refrigerator overnight to get the top to solidify. Remove the solid portion*. Whip with vanilla extract until it is light and fluffy using a hand mixer or NutriBullet.
In a dish or dessert glass, arrange coconut cream and strawberries.
