Recipe for Roasted Peppers
Bell peppers' sweetness and velvety texture are enhanced by roasting. They work well as a side dish, salad topping, healthful snack, or in addition to a cheese board.
They go great with a variety of recipes, like Rach's Chicken Cacciatore.
Ingredients
6 substantial red field or bell peppers
Preparation
When the skins are equally blackened and the flesh is soft, roast the peppers whole over an open flame on a gas cooktop or under a hot broiler. Peppers should be placed in a bowl and carefully covered with plastic wrap. Let stand until safe to handle.
Remove the peppers' charred peel with a paper towel, then seed, and stem, and slice them into strips after removing the seeds.
