Recipe for Vanilla Bean Sugar Cubes
Ingredients
- 4 beans of Madagascar vanilla
- White sugar, 3 cups
- Pure Madagascar vanilla essence, 1/4 cup
Directions
Set the oven to 275 degrees Fahrenheit.
The 4 vanilla beans should be split into 1/2-inch pieces and ground in a coffee grinder to a coarse powder.
Mix the sugar, vanilla bean powder, and extract in a large basin until well blended (when the extract is completely incorporated the mixture will look a bit like dough). The sugar mixture should be poured into an 8 by 8-inch pan and uniformly spread out to a thickness of 1/2 inch.
Next, run a knife down the length and breadth of the pan every 1/2 inch to score off cubes that are 1/2 inch by 1/2 inch in size. For 1 1/2 hours, bake. After cooling, remove the pan from the oven. To get the sugar off the pan when it has cooled, carefully turn it over onto a large cookie sheet. After letting the food cool completely, gently cut it into cubes along the scored lines.
Pour the cubes carefully into a large saucepan that is covered and shake it to "round" the edges of the cubes. Verify again if required. If there are any sugar granules that can be saved for granulated vanilla bean sugar, sift them out of the cubes in the saucepan using a strainer or sifter with a few tiny holes.
