Making Dulce of Leche
There are two ways to prepare my own dulce de leche. The first includes a little vanilla, milk, and sugar. These components are mixed, brought to a boil, and then simmered in a pot. After one hour and thirty to one hour and forty-five minutes, this procedure thickens the mixture. To prevent the milk from burning after this stage, whisk the mixture often. Watch your pan and exercise caution.
Ingredients
- Milk, 4 cups (32 ounces/1000 ml).
- ((10oz/300g)) 1 1/4 cups sugar
- A single vanilla bean
Instructions
Milk and sugar are combined in a heavy-bottomed pot.
Bring to a boil, then lower heat, cover, and simmer for 1 1/2 to 1 3/4 hours, stirring regularly, until the mixture has caramelized and thickened. (remove any froth that develops while boiling)
To prevent burning, stir more often when the milk caramelizes after about 1 hour.
Add vanilla extract after turning off the heat.
To cool, transfer to a bowl. around 1 1/2 cups are produced.
