Recipe for American Frosting
It might be a bit tough to prepare this delectable soft icing, so be sure to follow the directions completely. When the frosting is ready, it must be determined quickly and accurately, and the cake must then be covered with it right away.
Ingredients
- Two egg whites.
- 425g of granulated or caster sugar
- 100 ml of water
Method
Before you begin, make sure your cake is prepared since this frosting sets up really rapidly. A pot of water that can accommodate a heatproof bowl should be brought to a boil. With a hand-held electric beater, add the egg whites to the bowl and whisk until they are extremely firm.
Dissolve the sugar in the water in a separate saucepan over medium-high heat. Boil the mixture for 5–10 minutes, or until it reaches the "thread" stage—when the final few drops that drip from a metal spoon dipped in the syrup come out in one long, rather thick, and syrupy thread.
While continuously beating with a hand-held mixer, pour the boiling syrup over the stiffly beaten egg whites. Put the bowl over the heating water in the pan. Until the icing is snow-white, very thick, and meringue-like, continue whisking over the water for an additional 10-15 minutes.
Using a palette knife, swiftly spread the icing over the cake while often dipping the tool into a jug of hot water. Speed is crucial at this point since the ice sets up extremely rapidly.
