 Recipe for Floating Islands of Meringue


A traditional and delectable dessert is these little floating islands of egg whites and sugar atop a pool of custard. 

This extremely deliciously sweet dish will surprise your guests and family because of its rich caramel sauce, fluffy poached meringues, and sweet and creamy custard. 

Making the custard in advance will enable you to quickly prepare this dish when necessary. It takes 30 minutes to prepare this meal, which feeds 4 people.

Ingredients

  • Two egg whites.

Method

To prepare the meringues, first, whip the egg whites to soft peaks in a large bowl. Then, add the sugar gradually and whip until the mixture is glossy, soft, and fairly firm.

Using our traditional custard recipe, prepare the custard, then pour it into a small pan and simmer. The meringue mixture should be added in dessert spoonfuls and gently poached in custard for two minutes. 

To make them spongy, flip them over and poach for 1-2 minutes. Put this into two or three batches. While you finish cooking the remainder, place them on a flat platter.

Put the sugar in a skillet and cook it over high heat, stirring the pan regularly, until the sugar melts and turns a rich amber color. Turn off the heat, stir in 2 tablespoons of cold water to stop the caramel from cooking, and then re-start the pan on low heat.

Four shallow plates should receive the custard. Each dish should have 3 meringues on top of it. Drizzle the plates with caramel sauce, and then serve right away.
