Ingredients:
- 1 cup plain yogurt (preferably chilled)
- 1 small capsicum (bell pepper), finely chopped
- 1/2 small cucumber, finely chopped
- 1 small tomato, finely chopped (optional)
- 1-2 green chilies, finely chopped (adjust to taste)
- 1/2 teaspoon roasted cumin powder
- 1/2 teaspoon chaat masala (optional)
- Salt to taste
- Fresh coriander leaves, chopped for garnish
Instructions:
Prepare the Yogurt: In a mixing bowl, whisk the yogurt until smooth.
Add Vegetables: Add finely chopped capsicum, cucumber, tomato (if using), and green chilies to the yogurt.
Seasoning: Sprinkle roasted cumin powder, chaat masala (if using), and salt to taste. Mix well to combine.
Chill: Cover the raita and refrigerate for at least 15-20 minutes to let the flavors meld together.
Garnish and Serve: Before serving, garnish with fresh chopped coriander leaves.
Serve: Serve chilled Capsicum Raita alongside biryani or any spicy rice dish.
Tips:
- You can adjust the quantity of vegetables and spices according to your taste preferences.
- For a creamier texture, you can use Greek yogurt or strain regular yogurt through a cheesecloth to remove excess water.
- If you prefer a milder raita, deseed the green chilies before chopping.
Capsicum Raita adds a cool and tangy contrast to the spiciness of biryani, making it a perfect accompaniment. Enjoy!
