Lava Flow Popsicles
**Ingredients:**
For the Strawberry Layer:
- - 1 cup fresh strawberries, hulled and sliced
- - 2 tablespoons granulated sugar
- - 1 tablespoon water
For the Coconut Layer:
- - 1 can (13.5 oz) coconut milk
- - 2 tablespoons sweetened shredded coconut
For the Pineapple Layer:
- - 1 cup fresh pineapple chunks
- - 2 tablespoons pineapple juice
Additional:
- - Popsicle molds
- - Popsicle sticks
**Instructions:**
1. **Prepare the Strawberry Layer:**
- In a small saucepan, combine the sliced strawberries, sugar, and water.
- Cook over medium heat until the strawberries are soft and the sugar has dissolved about 5 minutes.
- Remove from heat and let it cool. Blend the mixture until smooth. This is your strawberry layer.
2. **Prepare the Coconut Layer:**
- In a bowl, mix the coconut milk and sweetened shredded coconut together.
3. **Prepare the Pineapple Layer:**
- Blend the fresh pineapple chunks with pineapple juice until smooth. This is your pineapple layer.
4. **Assemble the Popsicles:**
- Start by pouring a small amount of the strawberry mixture into each popsicle mold, filling them about 1/3 of the way.
- Freeze for about 1 hour, or until the strawberry layer is slightly firm.
- Next, pour a layer of the coconut mixture on top of the strawberry layer, filling another 1/3 of the mold. Insert the popsicle sticks.
- Freeze for another hour, or until the coconut layer is slightly firm.
- Finally, pour the pineapple mixture over the coconut layer to fill the molds.
- Freeze the popsicles for at least 4-6 hours, or until completely frozen.
5. **Serve:**
- To remove the popsicles from the molds, briefly run them under warm water.
